The U-boat is actually a U-Cruiser. It is based on a Type XI boat which was never built in reality. The U-cruiser is available in Mush Martins Überboot mod which will be ready somewhere in 2007
Planes taking off from carriers are not supported by Silent Hunter III. Therefore what you see in the movie is just a trick.
